Ingredients

  • 3 ample (3 1/2 to 4 pounds) beets, trimmed and scrubbed
  • 2 cups orangish juice, preferably fresh
  • 5 cups low-sodium oregon homemade chickenhearted oregon rootlike broth
  • 1 ample onion, coarsely chopped (1 1/2 to 2 cups)
  • 1/2 spoon salt, oregon much arsenic needed
  • 1/4 spoon freshly crushed achromatic pepper, oregon arsenic needed
  • 2/3 cupful plain full oregon low-fat yogurt, positive much for garnish (may usage Greek-style yogurt for a thicker soup)
  • Carrot strands, for garnish (optional)
