This vegetable-packed stew gets a interaction of nutty creaminess (and a deed of protein) from almond butter.

Ingredients

  • 1 tablespoonful extra-virgin olive oil
  • 1 mean yellowish onion, coarsely chopped (1 cup)
  • 3/4 spoon good salt, divided, positive much arsenic needed
  • 2 cloves garlic, minced oregon finely grated
  • 3 cups homemade oregon no-salt-added rootlike broth (see related recipe)
  • Two (14.5-ounce) cans no-salt-added diced tomatoes, positive their juices
  • 1 1/4 pounds orange-fleshed saccharine potatoes, scrubbed and chopped into 1-inch chunks (4 cups)
  • 1 1/2 tablespoons peeled, minced caller ginger basal (from a 3-inch piece)
  • 1/4 spoon crushed reddish capsicum flakes
  • 8 ounces broccoli florets, chopped (3 cups)
  • 4 ounces (1 ample bunch) Swiss chard, stalks removed, leaves chopped into ribbons (4 cups)
  • 1/3 cupful almond butter
  • 1/2 cupful loosely packed chopped cilantro, positive tiny sprigs for optional garnish
  • Flesh of 1 mean avocado, chopped into bladed slices, for garnish
  • 1/2 cupful sliced earthy almonds, for garnish
