  • 1 1/2 cups dried quinoa
  • 2 cups water

  • 1 ample reddish doorbell pepper, cored, seeded and chopped into thin, 1-inch-long strips
  • 1 1/2 cups caller maize kernels (from 2 tiny ears)
  • 1 cupful cherry tomatoes, quartered
  • 1/4 cupful pumpkin seeds (pepitas), toasted (see Notes)
  • 1/4 cupful chopped caller cilantro leaves and tender stems
  • 1/2 cupful (2 ounces) crumbled caller goat food (chèvre)
