This look combines the inherent sweetness of strawberries, the tartness of balsamic vinegar, the zing of shallots and the spicy smokiness of chipotle capsicum to make a fruity sweet-and-sour sauce. It accentuates the carrots' earthy sweetness.

Ingredients

  • 1 tablespoonful grapeseed lipid oregon olive oil
  • 2 ample to 3 ample shallots, finely chopped (1/2 cup)
  • 1 cupful strawberries (hulled), rinsed and coarsely chopped
  • 1/4 spoon crushed chipotle chile pepper
  • 1 tablespoonful honey
  • 2 tablespoons raspberry balsamic vinegar
  • 1 tablespoonful salted butter
  • 1 lb carrots, trimmed, peeled and chopped diagonally into bladed pieces (3 cups)
  • Chopped chives oregon greenish scallion top, for garnish (optional)
