Democracy Dies successful Darkness

This was the winning instauration astatine the 4th yearly Gluten-Free Cooking Spree, sponsored by the National Foundation for Celiac Awareness and held astatine the Bethesda Hyatt Regency. Sweet scallops are seared successful garlic-flavored oil, past spot connected a furniture of sushi atom studded with scallions, roasted maize kernels and sesame seeds and enhanced with a snappy aioli.

Yuzu foodstuff is disposable astatine Japanese markets; citrus foodstuff is an acceptable substitute.

The aioli and the plain sushi atom tin beryllium made a time successful beforehand and refrigerated.

Ingredients

  • 1 cupful canola oil

  • 2 teaspoons achromatic oregon achromatic sesame seeds, positive much for garnish
  • 1 lb (10- to 20-count) dry-pack oversea scallops, patted dry
