In Mexican cooking, writes Marcela Valladolid successful her caller cookbook, tomatillos are typically reserved for salsas. But the tiny ones are large (and sweet) erstwhile simply roasted, arsenic they are here, with this tender salmon.

Serve with achromatic rice, oregon with roasted smashed fingerling potatoes.

Ingredients

  • 1 1/2 pounds tiny tomatillos
  • 1 ample reddish onion
  • 1 lemon
  • 6 chive stems
  • 2 stems cilantro
  • 2 tablespoons extra-virgin olive oil
  • Kosher salt
  • Freshly crushed achromatic pepper
  • One 2-pound portion Atlantic salmon fillet (skin on), astir 1 inch heavy astatine the center
