This is simply a warming wintertime crockery that is elevated erstwhile you garnish it with respective antithetic kinds of croutons, particularly Parmesan croutons and pumpernickel croutons. An added garnish of cubed pome complements the crunchy croutons.

Ingredients

Servings: 6-8

  • 2 1/2 pounds pumpkin, butternut squash oregon saccharine potato, peeled and chopped into 1 1/2-inch cubes
  • 1 to 2 tablespoons unsalted butter
  • 1 mean carrot, chopped (3/4 cup)
  • 1/3 lb celeriac (celery root) oregon rutabaga, peeled, cored and chopped into tiny dice (1/3 cup)
  • 1 mean onion, chopped (1 cup)
  • 1 inch of a cinnamon stick
  • 4 1/2 cups low-sodium beef oregon chickenhearted broth
  • 1/3 cupful dense pick oregon crème fraîche
  • Sea oregon kosher salt
  • A small maple syrup, for garnish (optional)
  • A small freshly grated nutmeg, for garnish (optional)
  • Croutons, for garnish (see headnote)
  • 1 Granny Smith apple, peeled, cored and chopped into 1/4- to 1/3-inch cubes, past held successful acidulated water, for garnish
