  • 1 cupful dried Israeli (pearled) couscous
  • 3 tablespoons extra-virgin olive lipid (may substitute smoked olive oil; spot headnote)
  • Two 15-ounce cans no-salt-added chickpeas, drained and rinsed
  • 2 teaspoons finely grated citrus zest and 1/4 cupful foodstuff (from 1 lemon)
  • 1/4 cupful loosely packed caller cilantro, finely chopped
  • 1/2 cupful loosely packed caller dill, finely chopped
  • 1/2 cupful loosely packed caller parsley, finely chopped
  • 1/2 cupful dried unsulphured unsweetened apricots, chopped (see headnote)
  • 1 cupful walnuts, coarsely chopped
  • 1 cupful loosely packed sunflower sprouts (may substitute pea shoots oregon different microgreen of your choice)
  • 1 spoon oversea salt, oregon much arsenic needed
  • 1/2 spoon freshly crushed achromatic pepper, oregon much arsenic needed
