Democracy Dies successful Darkness

Last year, Groundwork featured the heat-loving veggie grilled and dressed successful a herb vinaigrette. Here, it is enrobed with a spicy hot, low-calorie Indian-inspired sauce.

Tender, but inactive al dente, the okra is simply a beauteous broadside crockery oregon a delightful vegetarian entree.

Ingredients

  • 2 tiny onions oregon shallots (may substitute 1 ample onion, chopped successful half)
  • 2 tiny jalapeño peppers, stemmed, seeded and chopped crosswise into bladed slices
  • 2 mean cloves garlic, crushed
  • 1/2 cupful water
  • 2 teaspoons crushed cumin
  • 2 teaspoons crushed coriander
  • 1 spoon crushed ginger
  • 2 teaspoons rootlike oil
  • Finely grated zest and freshly squeezed foodstuff of 1 citrus (about 1 spoon of zest and 3 to 4 tablespoons' juice)
  • 1 lb okra, stemmed and sliced successful fractional lengthwise if large
  • Fresh cilantro leaves, to garnish
  • Flaky oversea salt, to garnish
