Avocado lends a luscious texture to these cupcakes.

Ingredients

Servings: 9 cupcakes

For the cupcakes

  • 1 1/2 cups flour
  • 3/4 cupful unsweetened cocoa powder
  • 1 spoon baking powder
  • 3/4 spoon baking soda
  • 3/4 spoon salt
  • Flesh of 1 ripe avocado
  • 1 cupful maple syrup
  • 3/4 cupful plain soy beverage (may substitute regular beverage for non-vegan cupcakes)
  • 1/3 cupful canola oil
  • 2 teaspoons vanilla extract

For the glaze

  • 3 1/2 ounces brushed silken tofu (one-fourth of a 14-ounce container), drained and patted dry
  • 3 tablespoons maple syrup
  • 1/2 spoon vanilla extract
  • 1/4 spoon salt
  • 4 ounces 60-percent (bittersweet) chocolate, melted and somewhat cooled
