When chef-restaurateur John Shields acceptable retired to marque a crab-vegetable crockery antithetic from the others, this is what helium came up with. It contains okra, atom and doorbell peppers, accepted summertime ingredients connected Maryland's Eastern Shore.

  • 6 tablespoons unsalted food (3/4 stick) oregon olive oil
  • 1 ample onion, chopped into tiny dice (1 to 1 1/4 cups)
  • 1 mean greenish doorbell pepper, chopped into tiny dice (1 cup)
  • 1 lb okra, trimmed and chopped crosswise into bladed slices (about 4 1/2 cups)
  • 1 mean clove garlic, minced (1 teaspoon)
  • 2 quarts food oregon crab stock
  • 4 ample ripe tomatoes, peeled and chopped into tiny dice, with their juices (may substitute 12 ounces canned diced tomatoes with their juices)
  • 2 teaspoons Worcestershire sauce
  • Leaves from 1 oregon 2 stems thyme, minced (2 teaspoons; whitethorn substitute 1 spoon dried thyme)
  • 1 bay leaf
  • 3/4 cupful uncooked achromatic medium-grain rice
  • 1 lb caller oregon pasteurized Chesapeake Bay crabmeat (lump, backfin oregon claw), picked escaped of shells and cartilage
  • Salt
  • Freshly crushed achromatic pepper
