When the saccharine flavors of vanilla interact with curry powder, some ingredients are transformed. The effect is simply a satisfying interplay of sweetness and spiciness.

If you prefer, chickenhearted legs tin beryllium substituted for the duck. The crockery besides tin beryllium made with idiosyncratic cuts of pork; chops are a bully choice.

Ingredients

  • 1/2 vanilla bean, halved lengthwise, seeds scraped retired and reserved, legume chopped into 1/4- to 1/2-inch pieces
  • 2 teaspoons mild curry powder
  • 1/2 spoon salt
  • 4 duck legs, trimmed of excess abdominous (8 to 10 ounces each)
  • 2 tablespoons unsalted butter
  • 3 mean onion, chopped (4 cups)
  • 2 mean tomatoes, chopped (1 cup)
  • 4 ounces butternut squash, peeled and chopped into 1/2-inch cubes
  • 2 to 3 sun-dried tomatoes, finely chopped
  • 1 full clove
