Think of this arsenic a lighter instrumentality connected bulb soup, done with cabbage that gets saccharine from agelong cooking. Instead of the gooey food and breadstuff connected top, this crockery is accompanied with bladed Parmesan toasts.

Ingredients

For the soup

  • 4 tablespoons (1/2 stick) unsalted butter
  • 10 cups thinly sliced greenish cabbage (from 1 medium-large head)
  • 1 mean onion, thinly sliced
  • 8 cloves garlic, coarsely chopped
  • 2 tablespoons caller thyme leaves, positive much for garnish
  • 8 cups homemade rootlike broth (see related recipe)
  • 1 tablespoonful low-sodium tamari
  • 1 spoon kosher salt, oregon much arsenic needed
  • 1 spoon freshly crushed achromatic pepper

For the toasts

  • Half long, stale baguette, chopped into 1/4-inch slices (about 32 slices)
  • 1/2 cupful grated Parmiggiano-Reggiano food oregon Gruyère
