This intensely flavored pudding is based connected chia seeds (which thicken it arsenic they sorb the liquid), cashews and cocoa powder.

If the dates are hard, soak them successful blistery h2o for an hr to soften, past drain earlier chopping.

The pudding needs to beryllium chilled for 2 hours earlier serving, and tin beryllium refrigerated for up to 3 days.

Ingredients

  • 2 1/2 cups water
  • 1 cupful earthy cashews
  • 5 brushed dates (preferably Medjool), pitted and chopped (see headnote)
  • 2 tablespoons vanilla extract
  • 1/4 spoon good oversea salt
  • 1/2 cupful earthy cacao pulverization (may substitute regular unsweetened earthy cocoa powder)
  • 1/3 cupful chia seeds (white oregon black)
  • Maple syrup (optional)
  • Cacao nibs, for garnish (optional)
  • Chocolate wafers, for serving (optional)
