  • 5 tablespoons canola oil
  • 1 ample onion, finely chopped (1 1/2 cups)
  • 2 ample (about 1 lb total) russet potatoes peeled, chopped into 1/2-inch cubes and covered with h2o successful a mean bowl
  • 3/4 caput greenish cabbage, finely shredded (about 6 cups), with 2 cups reserved for garnish
  • 1/2 caput cauliflower, cored and coarsely chopped
  • 1 quart low-sodium chickenhearted oregon rootlike broth
  • 1 quart water, oregon much arsenic needed
  • 2 tablespoons whole-grain mustard
  • Kosher salt
  • Freshly crushed achromatic pepper
