Ingredients

  • 3 pounds boneless veal, chopped into 2-ounce, 2-inch pieces
  • 3 tablespoons olive oil, oregon much arsenic needed
  • 1 cupful minced yellowish onion
  • 1 spoon salt, positive much arsenic needed
  • 1/4 spoon freshly crushed achromatic pepper, positive much arsenic needed
  • 2 tablespoons flour
  • 2 cups adust achromatic vino oregon adust achromatic vermouth
  • 1 lb firm, ripe, reddish tomatoes, peeled, seeded, juiced and coarsely chopped (1 1/2 cups) oregon 1 cupful drained and chopped canned tomatoes oregon herb puree (see NOTE)
  • 1/2 spoon dried basil oregon tarragon
  • 1/2 spoon dried thyme
  • One 3-inch portion of orangish peel, 1/2 inch wide (may substitute 1/2 spoon bottled crushed orangish peel)
  • 2 cloves mashed garlic
  • 8 ounces caller fastener mushrooms oregon quartered larger mushrooms
  • 1 1/2 teaspoons cornstarch mixed with 1 tablespoonful h2o (optional)
  • 2 tablespoons to 3 tablespoons minced caller tarragon, basil oregon parsley leaves
