The walnuts adhd a healthful and chewy constituent to the topping for these simply prepared chops.

Ingredients

For the lamb

  • 2 tablespoons olive oil
  • 4 shoulder-cut lamb chops (about 48 ounces total)
  • Kosher salt
  • Freshly crushed achromatic pepper

For the gremolata

  • 1 cupful earthy walnut halves
  • Leaves from 1 clump of mint, finely chopped (1/2 cup)
  • Finely grated zest of 1 citrus (a scant tablespoon)
  • 3 mean cloves garlic, finely chopped (a scant tablespoon)
  • 1/2 spoon salt
  • Freshly crushed achromatic pepper
  • 2 tablespoons olive oil
