At Philadelphia's Vedge, chef-owner Rich Landau uses mushrooms successful 3 forms to marque this profoundly flavored stock: fresh, dried and powdered. If you can't find mushroom powder, usage an electrical spice grinder to pulverize dried porcinis, oysters oregon different mushroom of your choice.

The banal tin beryllium refrigerated for up to 1 week oregon frozen for up to 3 months.

Ingredients

  • 2 teaspoons canola oil
  • 8 cups (24 ounces) mushrooms oregon mushroom trimmings, wiped clean
  • 1 mean onion, chopped
  • 1 cupful dried shiitake mushrooms
  • 4 quarts water
  • 1 tablespoonful kosher salt
  • 1 tablespoonful porcini oregon different mushroom pulverization (see headnote)
  • 2 sprigs rosemary
