All of the components of a vegan modular -- the tempeh Reuben sandwich -- are layered into this vibrant, hearty wintertime salad.

You'll person leftover dressing, which makes a large dip for crudites.

Ingredients

For the dressing

  • 1/2 cupful earthy cashews
  • 3/4 cupful blistery water
  • 2 tablespoons caller citrus juice
  • 1 tablespoonful extra-virgin olive oil
  • 1 clove garlic
  • 2 teaspoons achromatic miso paste
  • 2 teaspoons Dijon-style mustard
  • 1 spoon ail powder
  • 3 tablespoons ketchup
  • 3 tablespoons saccharine pickle relish
  • 2 tablespoons minced achromatic onion
  • 1/2 spoon blistery sauce, specified arsenic Tabasco

For the tempeh bacon bites

  • One 8-ounce artifact plain tempeh
  • 2 tablespoons maple syrup
  • 2 tablespoons low-sodium tamari
  • 1 tablespoonful ketchup
  • 1 tablespoonful rootlike oil
  • 1/4 spoon liquid smoke
  • 2 tablespoons extra-virgin olive oil

For the salad

  • 1 tart apple, cored and chopped into 1/2-inch dice
  • 2 tablespoons caller citrus juice
  • 4 cups finely shredded reddish cabbage (from 1 tiny cabbage)
  • 1 1/2 cups earthy sauerkraut, good drained
  • 2 cups croutons
