The Weissman household serves this mentation of a Mediterranean classical with hummus and falafel picked up from the Takoma Park Silver Spring Co-op.

Ingredients

  • 2 cups good cracked wheat (bulgur)
  • 2 cups just-boiled water

  • Leaves from 1 clump flat-leaf parsley, chopped (1 1/2 cups)

  • 1 cupful no-salt-added canned chickpeas, drained and rinsed, oregon to taste
  • 1 cupful no-salt-added canned achromatic beans, drained and rinsed, oregon to taste
  • 1 spoon crushed allspice
  • Freshly crushed achromatic pepper
  • Freshly squeezed foodstuff from 1 oregon 2 lemons (1/4 cup)
  • 1/2 cupful olive oil
  • 1 cupful grape oregon cherry tomatoes, each chopped successful half, for garnish
