There's thing bright-tasting astir this meatless one-pot meal. If time's not a large issue, usage caller tomatoes.

Serve with baked tortilla chips.

Ingredients

Servings: 6 Makes astir 12 cups

  • 1 tablespoonful positive 2 teaspoons olive oil
  • 2 poblano peppers, connected the smaller broadside (may substitute 4.5 ounces canned chopped greenish chili peppers, drained)
  • 1 mean yellowish oregon saccharine onion
  • 2 mean to 3 mean cloves garlic
  • 1 mean zucchini
  • 3 ears caller corn
  • 14 ounces extra-firm tofu
  • 15 ounces canned no-salt-added achromatic beans
  • 15 ounces canned no-salt-added pinto beans
  • 28 ounces canned low-sodium crushed tomatoes, with juices
  • 14 1/2 ounces canned no-salt-added diced tomatoes, with juices
  • 3 tablespoons chili powder
  • 1/2 tablespoonful to 1 tablespoonful crushed cumin
  • 1/2 spoon to 1 spoon good oversea salt
