Thinly sliced eggplant planks get the schnitzel treatment, positive perky, tart spirit from crushed sumac. Serve with tabbouleh.

Ingredients

  • 1/4 cupful all-purpose flour
  • 2 ample eggs
  • 1 tablespoonful full oregon reduced-fat milk
  • 1 cupful panko
  • 2 tablespoons crushed sumac, divided
  • 1 tablespoonful finely grated parmesan cheese
  • 1 tablespoonful finely chopped caller mint leaves
  • 1 tablespoonful finely chopped caller flat-leaf parsley
  • 1 spoon finely grated citrus zest (from 1 lemon)
  • 1/2 spoon good salt, positive much arsenic needed
  • Freshly crushed achromatic pepper
  • 1 ample eggplant (1 1/4 to 1 1/2 pounds), trimmed and sliced lengthwise 3/4-inch thick
  • Olive oil, for frying
