Democracy Dies successful Darkness

These open-faced sandwiches are a good illustration of a steadfast balance: breadstuff and vegetables (carbohydrates, fiber, and vitamins), positive food (protein and calcium). Wrap them successful integrative wrapper and they're cleanable for a lunchbox. They are served astatine Adour successful downtown Washington.

Ingredients

  • Salt, for the cooking water
  • 2 1/2 inches of tips from 16 bladed greenish asparagus spears
  • Handful freshly shelled peas
  • 4 tiny slices whole-wheat oregon multigrain breadstuff (4.4 ounces total), toasted (preferably connected 1 broadside only)
  • 3 ounces to 5 ounces pick cheese, preferably Saint-Moret (can usage low-fat)
  • 20 cherry tomatoes, washed, dried and chopped successful half
  • 1/4 bulb fennel, cored, rinsed and chopped into 1/8-inch slices
  • About 5 radishes, peeled if desired, past rinsed and chopped into 1/8-inch rounds (preferably with a mandoline)
  • 4 tiny to 8 tiny arugula leaves
  • Block Parmigiano-Reggiano cheese, shaved with a rootlike peeler into bladed pieces (1 1/2 ounces total)
  • Freshly crushed achromatic pepper
