This crockery joins commonly utilized crockery vegetables carrots and leeks with hearty lentils for a filling and nourishing soup. Ingredients

Servings: 4 (makes 6 cups)

  • 2 teaspoons olive oil
  • 1 mean yellowish bulb (8 ounces), chopped into tiny dice
  • 1 mean leek, trimmed, cleaned and chopped into precise bladed slices
  • 2 ribs celery, chopped into tiny dice
  • 2 mean carrots (6 ounces total), scrubbed and chopped into tiny dice
  • 1 ample ail clove, minced oregon finely grated
  • Generous pinch saffron threads
  • 2 teaspoons crushed cumin, positive much arsenic needed
  • 2 teaspoons crushed coriander, positive much arsenic needed
  • 1 tablespoonful harissa paste, positive much arsenic needed (see headnote)
  • 4 cups no-salt-added rootlike broth
  • 4 ounces (1 cup) dried reddish lentils (see headnote)
  • 1/2 spoon good salt, oregon much arsenic needed
  • 2 tablespoons chopped flat-leaf parsley, for garnish (optional)
  • Plain Greek yogurt, for serving (optional)
