The elemental and speedy French cookware condiment gets a salty deed from bits of cured Virginia ham; hence the sanction of the dish.

Ingredients

  • 2 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 boneless, skinless chickenhearted bosom halves (trimmed of excess fat, and tenderloins arsenic needed, astir 1 1/2 pounds), pounded to a thickness of astir 3/4 inch
  • Sea salt
  • Freshly crushed achromatic pepper
  • 1/2 cupful finely crushed achromatic cornmeal (may substitute flour)
  • 1/4 cupful minced shallots oregon scallions
  • 3 tablespoons minced ham, specified arsenic Smithfield
  • 1/2 cupful achromatic wine, oregon much arsenic needed (may substitute chickenhearted broth)
  • 1 tablespoonful minced caller parsley
  • 1 spoon minced caller sage
  • 1/4 cupful dense cream
