Corn kernels, jalapeño and bulb bulk up this low-fat skillet version.

You'll request a 10-inch (medium) ovenproof skillet, preferably formed iron.

The maize breadstuff is champion served warm, but you tin refrigerate leftovers, wrapped successful integrative wrap, for up to 1 week. The leftovers are besides bully for cutting into cubes and toasting for crockery croutons.

Ingredients

  • 1/4 cupful diced yellowish onion
  • 1/2 cupful caller oregon frozen/defrosted maize kernels
  • 2 tablespoons seeded, finely chopped caller jalapeño peppers
  • 1/2 cupful flour
  • 2 teaspoons sugar
  • 2 teaspoons baking powder
  • 1/4 spoon baking soda
  • 1/2 spoon good oversea salt
  • 1 cupful stone-ground yellowish cornmeal
  • 3/4 cupful buttermilk
  • 1 ample egg, beaten
  • 2 tablespoons grapeseed oil
