For the spinach

  • 2 tablespoons olive oil
  • 1 clove garlic, minced
  • About 6 ounces (4 cups) babe spinach

For the salmon

  • 12 ounces salmon fillet halfway cut, belly trimmed, tegument removed, chopped into 8 1/4-inch-thick slices
  • Salt
  • Freshly crushed achromatic pepper
  • 1/4 cupful olive oil

For assembly

  • 1 yellowish tomato, chopped successful 1/4-inch-thick slices
  • Flesh from 1 ripe avocado, chopped into slices
  • 2 ounces micro greens (may substitute tract greens)
