Quinoa Pilaf With Spinach and Pancetta

Editor’s note: This is the 2nd installment successful a month’s worthy of play Nourish recipes that diagnostic full grains.

Quinoa is not truly a grain, but the effect is treated similar one. It comes packed with protein, which makes it a bully non-animal root of amino acids. Although the sanction sounds exotic (KEEN-wah oregon KEE-wah), it tastes reasonably bland.

One solution: Cook it similar a atom pilaf. Chicken broth, onions and pancetta each bring flavor. When the pilaf’s done, I harvester the hot, creamy quinoa with babe spinach.

And a caveat: Rinse the quinoa good earlier cooking. It is people coated with bitter-tasting saponins.

  • 1 spoon olive oil
  • 2 ounces diced pancetta
  • 1 tiny onion, finely chopped (1/2 cup)
  • 1 cupful dried quinoa, good rinsed (see headnote)
  • 1 3/4 cups homemade oregon no-salt-added chickenhearted broth
  • Freshly crushed achromatic pepper
  • 6 ounces babe spinach, rinsed and air-dried
