This is 1 of my go-to weeknight meals: It’s fast, flavorful and gets food and vegetables into the aforesaid crockery with ease. The food cooks rapidly successful the blistery liquid, which doubles arsenic a sauce. This crockery looks good, smells large and tastes fresh.

Ingredients

  • 1 tablespoonful olive oil

  • Finely grated zest and freshly squeezed foodstuff of 1 citrus (1 spoon zest, 2 tablespoons juice)
  • 1/2 spoon sugar, oregon much to taste
  • 1 lb skinless cod fillets, chopped into 1 1/2-inch chunks (may substitute different white, firm-fleshed fish
  • 2 tablespoons chopped parsley, for garnish
