Grab the shad portion it's here, and support it simple. For a much decadent meal, you could adhd crisp bacon pieces and caramelized onions and substitute a citrus beurre blanc for the vinaigrette.

Ingredients

For the shallot vinaigrette

  • 1 spoon finely minced shallot
  • 4 tablespoons atom vino vinegar
  • 1/2 cupful extra-virgin olive oil

For the asparagus

  • Freshly crushed achromatic pepper

For the shad

  • 1 1/2 teaspoons olive oil
  • 2 8-ounce boned shad fillets, tegument on
  • Salt
  • Freshly crushed achromatic pepper
  • 1/4 cupful flour
