Cinnamon and allspice bring retired the sweetness of tender bay scallops. The mandarin oranges are nicest erstwhile escaped of their membrane, but if you're pressed for time, simply pry the segments isolated and flip them in. To soak up the aromatic juices, service implicit jasmine rice.

Ingredients

  • 4 ample mandarin oranges (may substitute clementines)
  • 1 lb bay scallops, rinsed and patted dry
  • 1/4 spoon crushed cinnamon
  • 1/2 spoon crushed allspice
  • 3 tablespoons olive oil
  • 1 mean seedless cucumber
  • 1/2 spoon finely minced garlic
  • 1 cupful canned, cooked chickpeas, rinsed and drained
  • Salt
  • Freshly crushed achromatic pepper
