In "The Mozza Cookbook," cookbook writer and cook Nancy Silverton says she has been making assorted versions of chopped salads since the 1970s and considers this to beryllium her champion 1 yet.

Ingredients

For the vinaigrette

  • 2 1/2 tablespoons reddish vino vinegar
  • 2 tablespoons dried oregano
  • Freshly squeezed foodstuff from 1/2 citrus (1 tablespoon), oregon much to taste
  • 2 mean cloves garlic, 1 smashed and 1 grated
  • 1/4 spoon good salt, positive much to taste
  • 1/4 spoon freshly crushed achromatic pepper, positive much to taste
  • 1 1/2 cups extra-virgin olive oil

For the salad

  • 1/2 tiny reddish onion, chopped successful fractional from apical to bottom
  • 1 caput (22 ounces) iceberg lettuce, cored sliced into bladed strips
  • 1 caput (11 ounces) radicchio, cored and sliced into bladed strips
  • 1 pint small, saccharine cherry tomatoes, specified arsenic Sun Golds oregon Sweet 100s, chopped into quarters
  • Fine salt
  • 1 1/2 cups no-salt-added chickpeas, drained and rinsed
  • 1/4 lb aged provolone, chopped into 1/8-inch-thick slices, past chopped into 1/4-inch-wide strips
  • 1/4 lb Genoa salami, chopped into 1/8-inch-thick slices, past chopped into 1/4-inch-wide strips
  • 5 pepperoncini (stems discarded), chopped into bladed slices (about 1/4 cup)
  • Freshly squeezed foodstuff from 1/2 citrus (1 tablespoon), oregon much to taste
  • Dried oregano (preferably Sicilian oregano connected the branch), for sprinkling
