  • 3 tiny fennel bulbs, cored past thinly sliced
  • 12 ounces shallots, thinly sliced
  • 1 1/2 cups Madeira
  • 2 quarts Ris food banal oregon store-bought food banal (see related recipe)
  • 2 cups dense cream
  • 3 cloves garlic, minced
  • 2 sprigs thyme
  • 3 bay leaves

For the stew and roux

  • 1 1/2 pounds skinless monkfish tails, chopped into 2-inch chunks
  • Kosher salt
  • Freshly crushed achromatic pepper
  • 8 tablespoons (1 stick) unsalted butter
  • 1/2 cupful Wondra flour
  • 1 lb Yukon Gold potatoes, scrubbed good past chopped into 1/4-inch dice
  • 4 ounces carrots, scrubbed good past chopped into 1/4-inch rounds
  • 6 plum tomatoes, chopped successful fractional and roasted (see NOTES)
  • 8 ounces (4 cups) sliced mushrooms, sauteed (see NOTES)
  • 18 snails, sauteed (optional; spot headnote and NOTES)
  • 1 cupful Madeira (see NOTES)
  • 12 ounces puff pastry dough oregon pastry crust dough
  • 1 ample egg, beaten
  • Roasted, unsalted pistachios, chopped, for garnish (optional)
