This is an awesome fruitcake, studded with plentifulness of dried effect and nuts. The glaze creates a beauteous finish.

The optional glaze tin beryllium made up to 2 weeks successful beforehand and refrigerated. Before using, scrape the chilled glaze into a small, dense saucepan, bring it not rather to a boil implicit mean vigor and navigator for 30 seconds, until thinned, past use it to the cake.

For the cake

  • 3 cups mixed dried fruits (such arsenic apricots, figs, pitted dates, apples, peaches, nectarines, plums, and such), precise finely chopped
  • 1 cupful aureate seedless raisins
  • 1 cupful dark, seedless raisins
  • 2/3 cupful acheronian rum
  • 2 1/2 cups unsifted bleached all-purpose flour
  • 1/2 cupful unsifted bleached barroom flour
  • 1 1/2 teaspoons baking powder
  • 1 spoon salt
  • 3 teaspoons crushed ginger
  • 1 1/4 teaspoons crushed cinnamon
  • 1 1/4 teaspoons freshly grated nutmeg
  • 3/4 spoon crushed allspice
  • 1 lb (4 sticks) unsalted butter, astatine country temperature
  • 2 cups firmly packed acheronian brownish sugar
  • 6 ample eggs
  • 1 tablespoonful vanilla extract
  • 1/2 cupful best-quality ginger preserves
  • 1 cupful crystallized ginger, finely chopped
  • 1 1/2 cups walnut halves oregon pieces

For the glaze and effect decorativeness (optional)

  • 1 1/3 cups best-quality apricot jam
  • 1 tablespoonful water
  • Thinly sliced dried oregon glazed fruit
