This look takes mussels steamed successful achromatic vino and elevates it to a caller level. The results are worthy the other effort. Don't skip the steps for creating the lemon-rind garnish, arsenic it gives the crockery its distinctive flavor.

Ingredients

  • 4 lemons, preferably organic
  • 1 tablespoonful sugar
  • 2 1/2 pounds mussels
  • 12 sprigs parsley (stems and leaves separated)
  • 1 subdivision thyme, chopped into 4 oregon 5 tiny pieces
  • 1/2 ample bay leaf
  • 1 ample to 2 ample tiny shallots, finely minced
  • 1 tiny onion, finely minced
  • 3/4 cupful adust achromatic wine
  • 2 tablespoons acold unsalted butter
  • Freshly crushed achromatic pepper
