  • 4 mean (16 ounces) reddish tegument boiling oregon Yukon Gold potatoes, sliced 1/4 inch thick
  • 1 tablespoonful jalapeño chile capsicum pickling juice
  • 2 tablespoons rootlike oregon olive oil
  • 1/2 spoon salt
  • 1 tin (14 ounces) diced tomatoes (preferably fire-roasted), including their juice
  • 1 ample clove garlic, chopped successful half
  • 1/3 cupful coarsely chopped cilantro, positive other for garnish
  • 1/4 cupful sliced, pickled jalapeño chile peppers
  • 1 tablespoonful jalapeño chile capsicum pickling juice
  • 4 (1 to 1/1/4 pounds) skinless food fillets, specified arsenic mahi-mahi, halibut, grouper, snapper, achromatic cod oregon striped bass, preferably 3/4 to 1 inch thick, patted dry
