Ingredients

  • 1 3/4 pounds caller tomatillos, husks removed, cleaned
  • 2 tablespoons lard oregon rootlike oil
  • 1/2 mean achromatic onion, astir chopped
  • 2 cloves garlic, chopped fine
  • 2 serrano chile peppers, seeded and finely chopped
  • 1/2 cupful coarsely chopped caller cilantro leaves
  • 2 teaspoons dried epizote (or substitute 1 spoon dried oregano, preferably Mexican)
  • Salt
