For this stuffed flatbread, usage either regular whole-wheat flour oregon atta, a much refined whole-wheat flour disposable astatine Indian markets.

These are champion served close aft they are made.

The dough needs to remainder for 30 minutes. The salted cauliflower needs to beryllium for 30 minutes.

Ingredients

For the dough

  • 1 lb whole-wheat flour, positive much for dusting (see headnote)
  • 1 1/2 teaspoons kosher salt
  • 2 tablespoons rootlike oil, positive much for optional brushing
  • 1 cupful positive 2 tablespoons water

For the filling

  • 8 ounces cored cauliflower
  • 1/2 spoon kosher salt
  • 1 tablespoonful finely chopped dill
  • 3/4 tablespoonful peeled,finely grated ginger root
  • 1/4 spoon minced greenish chili capsicum (jalapeño oregon serrano)
  • 3/4 spoon crushed cumin
