For the cauliflower

  • 1 mean caput cauliflower, leaves removed
  • 3 cloves garlic, chopped
  • 2 tiny greenish chiles, stemmed, seeded if desired and coarsely chopped
  • One 4- oregon 5-inch portion peeled caller ginger root, chopped (3 to 4 tablespoons)
  • 1 spoon chili powder, preferably Kashmiri
  • 1/2 spoon garam masala (spice blend)
  • 3/4 spoon salt
  • 1 spoon caller citrus juice

For the masala

  • One 4- oregon 5-inch portion peeled caller ginger root, chopped (3 to 4 tablespoons)
  • 4 tablespoons coriander seed
  • 6 full cloves
  • 8 full achromatic peppercorns
  • 1/2 spoon cumin seed
  • 4 full cardamom pods
  • 3 tablespoons full almonds
  • One 1-inch portion cinnamon stick
  • 1/4 cupful freshly grated coconut (unsweetened)
  • 1/2 cupful store-bought oregon homemade ghee, astatine country somesthesia (see NOTE)
  • 5 cloves garlic, crushed
  • 1/2 ample onion, chopped (3/4 cup)
  • 3/4 spoon salt
  • 1/4 cupful plain full-fat yogurt
  • 1/2 cupful chopped caller tomatoes
