  • 1 1/2 pounds Yukon Gold potatoes, peeled and chopped into ample chunks
  • About 3 cups no-salt-added rootlike broth, oregon arsenic needed
  • Kosher salt
  • Freshly crushed achromatic pepper
  • 1 tablespoonful olive oil
  • 4 ample (about 2 1/4 pounds total) onion, chopped into precise bladed slices
  • 1 3/4 pounds caller mushrooms, cleaned, stemmed and coarsely chopped
  • 4 ample eggs, preferably organic, separated into whites and yolks
  • 1/2 cupful finely chopped flat-leaf parsley (from astir 15 stems)
