  • 2 leaves caller sage, thinly sliced
  • 1 tablespoonful unsalted butter
  • 1/4 spoon good oversea salt
  • 1 tablespoonful finely chopped flat-leaf parsley

For the eggs

  • 1 1/2 cups inexpensive, fruity reddish wine, preferably Burgundy, positive much arsenic needed
  • 4 duck eggs (may substitute extra-large chickenhearted eggs)
  • 1/2 spoon freshly crushed achromatic pepper
  • 1 tablespoonful finely chopped caller chives, for garnish
