This is simply a lightweight vegan crockery that seems close for the season.

Serve with seaweed crockery connected the side, oregon slices of avocado with sesame dressing.

Ingredients

  • Kosher salt
  • 3 ounces dried udon noodles
  • 4 ounces shiitake mushrooms
  • 2 scallions
  • 2 tiny cloves garlic
  • 1/4 tiny jalapeño capsicum (optional)
  • 1-inch portion ginger root
  • 1 tablespoonful olive oil
  • Pinch cayenne pepper
  • 2 1/2 cups no-salt-added rootlike broth
  • 2 teaspoons unseasoned atom vinegar
  • 2 teaspoons toasted sesame oil
  • 1/4 cupful roasted unsalted cashews, for garnish
  • Few stems cilantro, for garnish (optional)
