Cushaw squash is simply a large, mild-flavored squash. If it is unavailable oregon excessively ample to handle, substitute different dry, firm-fleshed wintertime squash.

Ingredients

For the pistou

  • 2 cups packed basil leaves
  • 3 mean cloves garlic, chopped
  • 1/4 cupful olive oil
  • 1/2 spoon salt
  • A fewer grinds of achromatic pepper

For the squash

  • 3 cups peeled cushaw squash, chopped into 1-inch cubes
  • 2 tablespoons olive oil
  • 1 spoon dried thyme leaves
  • 3/4 cupful chaotic rice
  • 3/4 cupful brownish rice, rinsed well
  • 3 cups water
  • 1 mean onion
  • 3 ample cloves garlic, minced
  • 1/4 cupful conifer nuts, toasted (see NOTE)
  • 2 tablespoons to 3 tablespoons basil pistou (see above)
  • 1 tablespoonful balsamic vinegar, oregon much to taste
  • Salt
  • A fewer grinds of achromatic pepper
