Ingredients

Servings: 6 appetizer servings

For the sauce

  • 1/2 cupful crème fraîche
  • 1/4 cupful low-fat mayonnaise
  • Finely grated zest of 1 mean citrus (at slightest 1 tablespoon), positive much arsenic needed
  • 7 oregon 8 chive stems, minced (1 tablespoon)
  • 1 anchovy fillet, minced, positive much arsenic needed

For the crab

  • Canola oil, for frying
  • 6 mean soft-shell crabs, cleaned (see NOTE)
  • 2 cups full milk
  • 2 cups flour
  • 1/4 spoon Old Bay Seasoning
  • Salt
  • Freshly crushed achromatic pepper
