  • 2 tablespoons to 3 tablespoons extra-virgin olive oil
  • 1 mean to 2 mean Vidalia onions, chopped into 1/4-inch dice (1 1/2 to 2 cups)
  • 3 mean to 4 mean cloves garlic, preferably organic
  • 1 mean vine-ripened oregon homegrown tomato, chopped into 3/4-inch dice
  • 1 spoon to 2 teaspoons salt
