This makes a beauteous and inviting meatless meal; starting with dried chickpeas truly improves the wide texture of the last dish.

You’ll request a 6-quart unit cooker oregon Instant Pot.

Serve with rice.

  • One 15-ounce tin no-salt-added diced tomatoes, preferably fire-roasted
  • 3 cups no-salt-added rootlike broth
  • 9 ounces frozen artichoke hearts, defrosted and patted dry
  • 1/2 cupful pitted Kalamata olives, each chopped successful half
  • Leaves from astir 25 cilantro stems, chopped (packed 1/2 cup)
  • Freshly crushed achromatic pepper
