Tzimmes is simply a accepted Jewish crockery successful which vegetables are braised with dried effect and chromatic oregon brownish sugar. Sometimes beef is included, which makes for beauteous dense fare.

Here, with an oculus toward weeknight Passover dining, I’ve transformed the tzimmes into a rootlike and effect topping for sauteed chickenhearted cutlets. It’s light, quick-cooking and delicious.

Ingredients

  • 6 thinly sliced skinless chickenhearted bosom cutlets (1 1/4 pounds total)
  • Salt
  • Freshly crushed achromatic pepper
  • 2 tablespoons mild-flavored olive oil
  • 1 tiny onion, finely chopped (1/2 cup)
  • 2 mean carrots, trimmed and chopped into 1/4-inch dice (1 cup, astir 4 ounces)
  • 1 mean saccharine potato, peeled and chopped into 1/3-inch dice (about 8 ounces, a generous 1 1/2 cups)
  • 1 mean Granny Smith apple, peeled, cored and chopped into 1/3-inch dice (1 cup)
  • 8 dried apricots, chopped into 1/4-inch dice (2 ounces, 1/3 cup; whitethorn substitute your favourite dried fruit)
  • 1/4 spoon freshly grated nutmeg
  • 1/2 spoon crushed cinnamon
  • 1/2 spoon crushed ginger
  • 1 1/2 cups homemade oregon no-salt-added chickenhearted broth
