  • 2 tablespoons extra-virgin olive lipid oregon rootlike oil, divided
  • 1/2 mean bulb (4 ounces total), finely chopped (1/2 cup)
  • 2 ounces pancetta, finely chopped
  • 2 mean carrots, diced oregon finely chopped (1/2 cup)
  • 2 ample ribs celery, finely chopped oregon diced (1/2 cup)
  • 1/2 mean fennel bulb, finely chopped oregon diced (1/2 cup; optional)
  • 4 oregon 5 ail cloves, finely chopped
