Emma Scielzo, 10, was the Maryland victor of this year's Healthy Lunchtime Challenge contest, sponsored by the White House and Epicurious.com. Here’s the headnote she included with her recipe:

"My Nani (grandmother) cooks steadfast and delicious Indian nutrient for america whenever we visit. (I americium Indian American.) She inspires maine to effort antithetic flavors, spices and herbs successful the nutrient I eat. Many of the ingredients recovered successful Indian cooking are precise steadfast for our bodies, specified arsenic garlic, ginger, turmeric and cumin. Also, Indian cooking uses a batch of vegetables that are bully for you, specified arsenic tomatoes, onions and peppers. I don't similar a batch of spice successful my food, but I bash similar a batch of flavor!!"

Ingredients

  • 1 tablespoonful rootlike oil
  • 2 to 3 red, yellow, greenish oregon orangish doorbell peppers, seeded and chopped into 1/2-inch strips
  • 1 steadfast mean tomato, chopped into 1/2-inch dice
  • 1 saccharine onion, chopped into quarters and past into 1/4inch slices
  • 1/2 spoon ginger paste oregon 1 spoon peeled, freshly grated ginger root
  • 1/2 spoon ail paste oregon 1 clove garlic, minced
  • 1/8 spoon crushed reddish capsicum flakes (may substitute blistery paprika)
  • 1/4 spoon crushed cumin, oregon much to taste
  • 1/8 spoon crushed cinnamon, oregon much to taste
  • 1/8 spoon crushed turmeric, oregon much to taste
  • 1/2 spoon salt
  • 1/4 spoon freshly crushed achromatic pepper
  • 1/4 cupful water
  • 4 grilled oregon cooked boneless, skinless chickenhearted bosom halves (without tenderloins, trimmed of excess fat), chopped into 1/2-inch-wide strips (about 1 1/2 pounds)
  • 1 cupful plain nonfat yogurt
  • 1/3 mean cucumber, peeled and shredded, positive immoderate accumulated juices
  • Fresh mint leaves (optional)
  • 1 cupful lettuce of your choice, torn into bite-size pieces
  • Four 6-inch whole-wheat tortillas oregon flatbreads, warmed
  • Fresh mango slices, for serving
