Although the archetypal look for Caesar salad, concocted successful 1924 by restaurateur Caesar Cardini, did not telephone for anchovies, I wouldn’t imagination of leaving them out. Their salty sharpness truly enhances the dressing.

The different alteration I’ve made is to omit the coddled (briefly boiled) egg; I'm not particularly fond of its slick texture. Instead, I usage a spot of Dijon mustard and mayonnaise to hindrance the dressing.

Ingredients

For the croutons

  • 2 cups cubed Italian breadstuff (about 6 ounces)

  • 1 caput radicchio di treviso oregon radicchio di chioggia, washed and torn into ample pieces
  • Freshly squeezed foodstuff of 1 citrus (3 to 4 tablespoons)
  • 1 oregon 2 dashes Worcestershire condiment (about 1 teaspoon)
  • 6 tablespoons freshly grated Parmiggiano-Reggiano food (about 1 ounce)
  • Freshly crushed achromatic pepper
  • 12 ounces cooked chicken, specified arsenic leftover grilled skinless, boneless chickenhearted bosom oregon skinned rotisserie chicken
